🔪 Job Description
As a Sushiman at Akiro Chicago, you will be responsible for preparing sushi and Nikkei-inspired dishes that meet our high culinary standards. You’ll work closely with our Head Chef and culinary team to deliver visually striking and flavorful plates with precision and consistency.

✅ Responsibilities
-Prepare all types of sushi including nigiri, sashimi, maki, and hand rolls
-Maintain proper knife techniques, product handling, and hygiene standards
-Manage inventory and ensure fish and ingredients are fresh and well-stocked
-Collaborate with kitchen team to ensure smooth service and consistency
-Follow recipes and plating specifications from the Akiro culinary team
-Uphold sanitation standards in accordance with Chicago food safety guidelines

👨‍🍳 Qualifications
-Minimum 2 years experience working in sushi kitchens (Nikkei experience a plus)
-Deep knowledge of sushi techniques, rice preparation, and knife skills
-Able to work in a fast-paced, high-volume environment
-Food Handler’s Certification required; Basset/ServSafe Manager is a plus
-Attention to detail, team mentality, and passion for craft

🔪 Descripción del Puesto

Como Sushiman en Akiro Chicago, serás responsable de preparar sushi y platos inspirados en la cocina Nikkei que cumplan con nuestros altos estándares culinarios. Trabajarás en estrecha colaboración con nuestro Chef Ejecutivo y el equipo culinario para ofrecer platos visualmente impactantes y llenos de sabor, con precisión y consistencia.

✅ Responsabilidades

Preparar todo tipo de sushi, incluyendo nigiri, sashimi, maki y hand rolls
Mantener técnicas de cuchillo adecuadas, manejo correcto de productos e higiene
Gestionar el inventario y asegurar que el pescado e ingredientes estén siempre frescos y bien abastecidos
Colaborar con el equipo de cocina para garantizar un servicio fluido y consistente
Seguir las recetas y especificaciones de emplatado del equipo culinario de Akiro
Cumplir con las normas de sanidad y seguridad alimentaria del estado de Illinois y la ciudad de Chicago

👨‍🍳 Requisitos

Mínimo 2 años de experiencia trabajando en cocinas de sushi (experiencia Nikkei es un plus)
Conocimiento profundo de las técnicas de sushi, preparación del arroz y manejo de cuchillos
Capacidad para trabajar en un entorno rápido y de alto volumen
Certificación de Manipulador de Alimentos requerida; BASSET o ServSafe Manager es una ventaja
Atención al detalle, mentalidad de equipo y pasión por la gastronomía y la excelencia
